## Egg test: distinguishing between fresh and spoiled eggs

Eggs are not only eaten at Easter. They are served in dishes, especially in desserts, sauces, as scrambled or fried eggs. The question arises again and again how to distinguish a fresh egg from an old or bad egg. Check out some simple egg tests in the following article to see if the egg is still safe to eat.

### Five egg tests: is the raw egg fresh or old?

The shell of an egg is permeable to air; That is, the older an egg gets, the more air gets through the pores of the shell into the interior of the egg. The result: the egg evaporates or dries out from the inside over time, the air bubble in the egg enlarges.

### Egg test: egg test in water (swimming method)

Put the raw egg in a glass with cold water. If it sinks to the bottom, it is still very fresh. If it is about 7 days old, it will be a little slanted in the water. When the egg floats on the surface of the water, it is at least 21 days old. This has to do with the air chamber that gives an older egg buoyancy.

### Egg test: determine the laying date yourself

The freshness of the egg can be determined mathematically based on the laying date. The following applies here: best before date minus 28 days = laying date. I. E. again not that an egg that has passed the best-before date is bad and no longer suitable for consumption. But you should heat it to at least 70 degrees for a long time.

### Egg test: the shaking method ...

If you shake an raw egg and don't hear a chuckle, the egg is still very fresh. The older an egg, the more clearly you hear or feel a sloshing. If you hear or feel a sloshing sound, the egg is no longer completely fresh because the egg white (egg white) has become thinner.

### Egg test: the light method ...

If you hold the raw egg in front of a strong light source, you can see the egg yolk because fresh eggs are translucent. If the egg yolk always stays in a central position when turning the egg, the egg is fresh. If the yolk begins to migrate when the egg is turning, it is an older specimen.

### Egg test: the whipping method ...

You can recognize an open egg that is fresh by its arched yolk, which holds the egg white (egg white) together in a ring. In older eggs, the yolk is flat and no longer holds the egg white (egg white) together as tightly.

If it's an older egg, it doesn't have to be bad. So don't just throw away an older egg!

### When is the egg no longer suitable for consumption?

If the egg stands up during the first egg test (egg test in water - swimming method), i.e. if it swims at the top, many advisors recommend not using it anymore. It is not easy to spot an old egg that is just about ready to be eaten.

It is better not to use such an egg for meals where it is used raw, e.g. B. for egg desserts, but in dishes where it is cooked well, z. B. for a cake.

Do the cracking test, but clean the shell of the egg before cracking it. Because in the case of Salmonella, the bacteria are usually present on the shell, not inside the egg. If you wash the egg, you do not run the risk that if the egg is cracked, its inside will come into contact with the pathogens on the shell.

If the egg is spoiled, you will be able to smell it immediately by the typical foul sulfur odor and recognize it by the changed color. So if you want to test several eggs, beat them separately and separately from each other (e.g. if a cake is to be baked). If you are unsure, throw the egg away to be on the safe side.

### How should eggs be stored so that they remain edible for a long time?

There are a few rules of thumb to keep in mind here. If in doubt, you can still use the egg tests above to check the freshness of the egg. In general, eggs should be stored refrigerated and protected from light.

They last longer in the refrigerator than in the pantry, namely:

• raw eggs: at least until the best before date
• boiled eggs: 1-2 weeks
• Food made with raw eggs: 24 hours
• raw egg yolk or raw egg white (egg white): 3 days

As eggs are permeable to air, it is advisable to store them separately from food with a strong smell. Simply use the egg carton with the eggs pointed down. The egg compartment in the refrigerator is also suitable if it can be closed with a flap.

But you can also use the air permeability of the eggs if you want them to take on a certain smell, e.g. B. the smell of truffles. Then keep the eggs with the truffles.

You also have the option of freezing eggs (at least minus 18 degrees Celsius). However, they should then be used for food that is well cooked.

The following rules of thumb apply to freezing:

• whole raw eggs: 8-10 months (at least minus 18 degrees Celsius)
• raw egg yolk: 8-10 months (at least minus 18 degrees Celsius)
• raw egg white (egg white): 10-12 months (at least minus 18 degrees Celsius)

If you don't have a refrigerator, you can assume that eggs can be stored unrefrigerated for around 20 days after the laying date. The cooled version is safer, however.

### Egg test: Finally, two rules

The fresher an egg, the more difficult it is to peel it after cooking. This is due to the lack of air that detaches the fine egg skin from the shell. With older boiled eggs, the shell is therefore much easier to peel.

A boiled egg whose yolk has turned blue-green on the outside is not bad. It was just cooked too long.

### Are spoiled eggs dangerous?

Eggs, like all foods, can pose health problems for a variety of reasons. Eggs can be infected with pathogens, fungi or bacteria (e.g. salmonella) or simply develop toxic substances at some point as they age. The older an egg gets, the more likely it is that such influences will negatively affect its health.

But the type of preparation can also minimize risks. For example, if eggs are hard-boiled for longer or fried for a long time, the heat alone kills various pathogens and bacteria. For this reason, for example, in some hotels you only get hard-boiled eggs (which have been boiled for at least 10 minutes) for breakfast.

In order to avoid the risks mentioned, one should generally refrain from eating eggs that are too old (and therefore possibly already spoiled). Remember: only in the best case nothing happens. However, if you are unlucky you can risk anything from nausea to food poisoning. So steer clear of eggs that are too old or spoiled so as not to put your health at risk.
