Thai curries consist of spice pastes with chilli, ginger, garlic, onions, herbs and coconut milk. The pastes are available in different colors, the green paste is the hottest, followed by the red version or the mild yellow. You should feel your way slowly and prefer to add some seasoning, otherwise it can get very spicy.
