  4. Cover and put the roasting pan in the hot oven (center). Let the roast stew for about 2 hours, turning the heat down to 150 ° after 30 minutes. Remove the finished roast, wrap it in aluminum foil and let it rest for approx. 10 minutes.
  5. In the meantime, pour the sauce with the vegetables through a sieve into a saucepan and squeeze out the vegetables well. Simmer the sauce and serve with the roast.
